We are well into summertime and even though 2020 has us all in a mess, we can avoid getting a summertime slump by eating good and feeling healthy!

1) Honey Lemon Vinaigrette Salad Dressing (by the Busy Baker):

What you will need:

  • 1/2 cup olive oil
  • 1/4 cup white wine vinegar
  • zest and juice of one lemon
  • 1 tablespoon dijon mustard
  • 1/4 cup liquid honey (Seasonal Orange Blossom works well for this recipe)
  • salt and pepper to taste
  • 1/2 teaspoon fresh (chopped) or dried chopped thyme

Directions:

  1. Combine all of the ingredients in a jar (many of our customers re-use their empty honey jars for this) and shake very well.
  2. Store your salad dressing in the refrigerator (it generally keeps between 3-5 days in an airtight container).

For best results, shake the dressing very well before pouring it on top of your favorite salad.

2) 5 Minute Asian Salad Dressing (by Sweet Peas and Saffron):

What you will you need:

  • 1/4 cup extra virgin olive oil
  • 1/4 cup seasoned rice vinegar
  • 1 1/2 tablespoons liquid honey (Try our Turmeric and Ginger Infused honey with this recipe)
  • 3 tablespoons sesame oil **If you use toasted sesame oil, start with 1 teaspoon and add more as needed
  • 1 1/2 teaspoons soy sauce (reduced sodium)
  • pinch salt
  • 1 -2 cloves garlic minced (optional)

Directions:

  1. Combine all of the ingredients in a jar and shake well.
  2. Store your salad dressing in the refrigerator (it generally keeps up to 1 week in an airtight container).

For best results, shake the dressing well before pouring it on your salad.

Pro Tip: Mix it up! Add peanut butter to this mix to make a creamy and thicker version by adding peanut butter (or another) nut butter. Start with 1-2 tablespoons and add water as needed if it is too thick.
